Bland casseroles and dry meatloaf are all but an outdated clich\u00e9 when it comes to the menu in senior living \u2014 at least at The Legacy at Crystal Falls<\/a>. In this community, Chef Eddie Zavala is turning mealtime for older adults into something more tasty, fun, and unpredictable.<\/p>

A culinary veteran with 25 years of experience in kitchens ranging from fine dining to seafood steakhouses and even management at Pluckers, Zavala brings a fresh approach to senior dining.<\/p>

\u201cI never went to culinary school,\u201d Chef Zavala shares. \u201cI\u2019ve learned everything in the trenches of the kitchen.\u201d<\/p>

Over the years, he\u2019s found a deep connection to his work, understanding that food is more than just sustenance \u2014 it\u2019s an opportunity to create relationships and foster a sense of community.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t

Favorites like lasagna, ribs, fried catfish, and beef tenderloin are staples on the menu. \u201cThe residents love food that reminds them of home,\u201d says Zavala. \u201cIf we get the seasonings right and make them of high quality, they\u2019ll love them.\u201d<\/p>

But when he\u2019s not cooking in the kitchen, he\u2019s creating memories with the residents. Sometimes, that means dressing up in fun costumes \u2014 like Santa, the Easter Bunny, or even a leprechaun. \u201cI don\u2019t know when it started, but it\u2019s become a fun way to surprise them,\u201d he says, smiling. \u201cI put on a costume, take some photos, and everyone\u2019s happy.\u201d<\/p>

Chef Zavala\u2019s culinary creations are often spontaneous, and include parfaits, strawberry smoothies, and angel food cake with blueberry reduction. \u201cIt\u2019s great to see the residents enjoy it, but it\u2019s also nice when families compliment the food too,\u201d Zavala adds. \u201cIt\u2019s all about giving them something they enjoy.\u201d<\/p>
