A culinary veteran with 25 years of experience in kitchens ranging from fine dining to seafood steakhouses and even management at Pluckers, Zavala brings a fresh approach to senior dining.
“I never went to culinary school,” Chef Zavala shares. “I’ve learned everything in the trenches of the kitchen.”
Over the years, he’s found a deep connection to his work, understanding that food is more than just sustenance — it’s an opportunity to create relationships and foster a sense of community.
Favorites like lasagna, ribs, fried catfish, and beef tenderloin are staples on the menu. “The residents love food that reminds them of home,” says Zavala. “If we get the seasonings right and make them of high quality, they’ll love them.”
But when he’s not cooking in the kitchen, he’s creating memories with the residents. Sometimes, that means dressing up in fun costumes — like Santa, the Easter Bunny, or even a leprechaun. “I don’t know when it started, but it’s become a fun way to surprise them,” he says, smiling. “I put on a costume, take some photos, and everyone’s happy.”
Chef Zavala’s culinary creations are often spontaneous, and include parfaits, strawberry smoothies, and angel food cake with blueberry reduction. “It’s great to see the residents enjoy it, but it’s also nice when families compliment the food too,” Zavala adds. “It’s all about giving them something they enjoy.”
